The Santoku is a Japanese all-purpose kitchen knife, similar to a chef's knife,
the Santoku is the modern knife now used for just about every cutting job in the
kitchen. The blade edge features hollow flutes which create pockets of air to
prevent extra thin or soft slices from sticking to the blade. Perfect for
vegetables, poultry, and fish, also excels in slicing, dicing, and chopping.
